Lindaville Chicken

From the kitchen of: Dawn Corbin
1 lb. boneless, skinless chicken
1 c. condensed cream of mushroom or celery soup
1 pkg. frozen broccoli or fresh broccoli, cut up
Salt & pepper
Bread crumbs (if desired)

Preheat oven to 375ºF. Use shallow baking dish with cover, 9x9 inches. Spray with cooking spray. Cook broccoli just enough to separate frozen pieces. Drain and set aside.

Place chicken evenly on bottom of baking dish. Salt and pepper lightly. Spread soup over chicken evenly. Spread broccoli over soup; salt and pepper the broccoli. With back of spoon, gently press the broccoli into the soup. Sprinkle with bread crumbs if desired. Cover dish. Bake at least 45 minutes or until chicken is tender. Yield: 4 servings.

Serve with rice, mashed potatoes, or Stove Top stuffing.
