Oatmeal Cookies

From the kitchen of: Dawn Corbin

1 c. Shortening
3/4 c. packed brown sugar
3/4 c. granulated sugar
1 egg
1/4 c. water
1 tsp. vanilla
1 c. flour
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
3 1/4 c. quick oats

Cream shortening and sugars. Beat in egg, vanilla, and water. Stir in remaining ingredients. Optional additions: 3/4 c. raisins and or 3/4 c. chopped walnuts. Drop by teaspoon onto well greased cookie sheet. Bake at 350°F until golden; about 15 minutes. I like walnuts and raisins in mine.
