Sunny Scalloped Potatoes

From the kitchen of Dawn Corbin
Ingredients
¼ lb. browned bacon, crumbled
4 c. cooked potato, sliced
¼ c. chopped green bell pepper
¼ c. chopped onion
1 Tbsp. margarine
½ lb. Velveeta, cubed
¼ c. milk
2 Tbsp. pimentos, finely chopped
Directions
Arrange potatoes in greased 9x13" baking dish. Saute green peppers and onions in margarine. Add Velveeta and milk. Stir over low heat till cheese is melted. Sprinkle bacon over potatoes. Pour cheese mixture over potatoes and bacon. Put pimentos on top. Bake at 350°F 20 minutes or until potatoes are thoroughly heated.
