Sweet Potato Casserole

2 cups sweet potato, cubed (about 3 large sweet potatoes)
honey and or erythritol to taste
2 eggs, beaten
1/4 teaspoon salt
2 tablespoons butter, softened
1/4 cup cream
1/4 teaspoon vanilla extract

Boil sweet potatoes until tender. Mash with the rest of the ingredients. Bake for 15 minutes at 350°F
