Zuchini Casserole

By way of inspiration from Jane Zick
Ingredients
2 lbs. zucchini, cut up
1 onion, diced
1 carrot, grated (optional)
1 can undiluted cream of mushroom or cream of chicken soup
1 c. sour cream
1 pkg. Stove Top stuffing mix
Instructions
Par-boil and drain the zucchini, onion, and if desired carrot. Make Stove Top stuffing mix as directed on package. Alternate layers of squash mixture and stuffing. Bake 30 minutes at 350°.
